Fondant du Val d’Arly recipe, the baked cheese box

A baked cheese box like a Mont d’Or, but 100% Savoyard: the fondant du Val d’Arly, a raw-milk cheese from the Flumet cooperative, baked in its wooden box and served with cured meats and potatoes. To share for two, just like in our restaurants.

The chef's advice

Why the fondant du Val d’Arly? It is made in Savoie by the Val d’Arly cooperative in Flumet, from whole raw milk from cows fed on grass and hay, with no fermented feed. Its supple, dense paste melts without turning liquid, with a mild taste of milk, cream and fruit: ideal baked in its box.

The Fondus tip: wrap the box in aluminium foil so the wood does not burn, and take the cheese out of the fridge half an hour beforehand so it melts right to the centre.

Serve straight from the oven, while the cheese is still stretching on the fork.
