Take the time to grate the cheeses finely, to facilitate melting and give a more homogenous texture. Don't hesitate to add a touch of nutmeg or black pepper to enhance the aromas. Finally, serve your fondue with a selection of charcuterie and a green salad to balance the meal, all accompanied by a dry white Savoy wine.

Preparation

Prepare the fondue pot rub the inside with a clove of garlic for a subtle fragrance.
Heat the wine In the caquelon, bring the white wine to a simmer without boiling.
Add the cheeses grate them, then gradually add them to the wine, stirring constantly to form a paste.
Add the cornflour Dilute it in kirsch or a little wine before adding it to thicken and smooth the mixture.

Serve immediately Place the fondue pot on a stove to keep it warm, and serve with the bread pieces.
